I made a couple of these last night for a family BBQ and they were DELICIOUS! Everyone gobbled them up. I figured I'd share since they're red, white & blue and could make a great dish to bring to any 4th of July event. They're also not horrible for you, at 160 calories for 1/8th of the pie... and they count for a f ruit & probiotic serving!

1 nilla wafer type pie crust
2 tubs of greek yogurt -- honey flavors
3 cups of berries (I used strawberry, blueberry, raspberry & blackberry)
1 tablespoon confectioners sugar

... spread 1 tub of yogurt in pie crust, top with a later of berries, spread other tub of yogurt, top with the rest of berries, sprinkle with sugar! ta-da!

ETA: I think this is actually called a tart & not a pie, but whatever, lol

Darius would go nuts for this. His favorite food these days is greek yogurt with berries, and I usually put a drizzle of honey on it when I give it to him (but its easier than making a pie, and I'm lazy, so no pie for him!!!)

Yeah Lily loves berries & yogurt too so she went pretty nuts over this! Even Granny had two full slices (s0 a quarter of the pie!) right after dinner!

Heather what did you think?

I made a couple more on the 4th for my ILs... they're so light, it was a total hit!

well, i didnt realize i hated raspberries until this pie. and as you can see, i loaded the pie down with fruit (i didnt exactly follow the 3 cup portion size). So, i spent the whole time picking through my slice to dig out the raspberries...

but everything else was pretty good. I'm still bummed i forgot the blackberries. i looove blackberries.
