I have taken Rogan off milk 1week ago(his eczema was getting really bad). Since doing so, he is not as much of an animal ( or very hipper) and ......... his has slept throught the night EVERY NIGHT !!!!! He was up everynight at lease one if not more. So we are following a milk free diet for him and hope to see his ecxema clear.

I also am starting cabbage rolls for Christmas !! When I am cooking I would like to make a casserole or something (with ground beef) for a babysitter to cook on Friday. Any ideas ??

I think Jenny, Haddy's mom, had mentioned that hazelwood is good for clearing up excema.

This is my favorite ground beef casserole. I may have to makethis later this week when hubby is home again!

Cheesy Hamburger-Rice casserole

Brown 1.5 lb-2 lbs ground beef with 1 medium chopped onion
Drain fat
Add 1 can cream of chicken soup, 1 can of French onion soup, 2-3 cups cooked rice, and 8 oz cubed cheese (cheddar, monterey jack, etc).
Put in ungreased corningware type dish
Top wth 8 oz shredded cheese
Bake covered at 350* for 20 minutes, then uncovered for an additional 20 minutes.

Makes 6-8 cups

I found a dairy free cream soups substitute! I'd link it but
I'm on my phone Here it is:

This is equal to one can of soup
2 TBSP Smart Balance (or other dairy free) butter or margarine
3 TBSP Cornstarch
1 cup soy milk (or almond milk or rice milk)
1 cup chicken broth
Salt and Pepper to taste

Melt butter over medium heat. Slowly add soy milk and chicken broth. Mix cornstarch with 2-3 TBSP soy milk until dissolved. Bring to boil and add cornstarch mixture. Stir constantly until thickened. Add 1 TBSP cornstarch at a time until thick, if needed. Salt and pepper to taste.

You can also add garlic powder, onion powder, shredded chicken, and/or mushroom if you like, depending on the reccipe and why you have handy.

So glad to hear that you are liking staying at home!

Random, I know, but I could have sworn your username was "CountyMom", not "CountryMom"

Thanks Amy will have to try that. I have alway just made a homemade mush soup and tryed to not add as much milk so it was thicker.

And Kelli it was Countymom but I had wanted Countrymom and one day I was playing around and I changed it to Country
