I start back at work this week after 22 months off with my beautiful girl . I'm working two days a week and looking for lunchbox inspiration. I love salads, pasta salads etc but I need the motivation to actually make it the night before... and some good recipes if you've got them! What do you pack for lunch?

(Unfortunately my weakness is snacks...too many snack machines easily accessible to tempt me!)

I usually grab some Lean Cuisine type frozen meals. I figure if I'm going to go the convenience food route it might as well be "healthy" Or I just end up with a lunch meat sandwich...gross but it gets me through. On weekends we all sign up to bring in food for everyone so those days are usually covered! This weekend the person who signed up made biscuit pizzas - she used premade biscuits and topped them with all different stuff and cooked them so all we had to do was heat them up. You could easily make a tray of them and keep them in the fridge for a few days. Actually I might do that for easy lunches for the girls!

I'm a creature of habit with lunch, so I always have a bagel sandwich. I toast a bagel, put a little cream cheese on it, sprinkle some Italian herbs on it, then add a slice of turkey and cheese. For snacks, I pack dried fruit or 100 calorie pack crackers. I also put in a banana or a fruit cup of some sort.

I'm not big on the frozen meals... used to like them when I was younger but not anymore unfortunately! I LOVE bagels. I used to have them all the time when I lived in England. I can honestly say I haven't had a bagel for years. I don't think they're a big thing over here, but now you've made me think of them I'd love a cream cheese and salad bagel!

i like wraps...I load it up with veggies and hummus- cranberries- walnuts- sprouts. yummy! Sometimes I will add turkey or tuna. I also like salad with tuna salad on top- with a balsamic dressing. Very yummy. I also make no bake peanut butter balls for a snack.

I bring the single serve frozen veggies from Green Giant. Or cereal and a container of milk. Sometimes I make a sandwich. Lots of times I just bring leftovers from last night. I pack my lunch every day because we only have 30 minutes and we are not allowed to leave school grounds during lunch.

All of these ideas are making me hungry especially the bagel sandwiches - YUM!


I don't live too far from my job, so I just go home for lunch. I do either leftovers, frozen dinners (not a big fan) or a sandwich.
