Got any easy and yummy pumpkin recipes to share? Ofcourse I'm looking for the dessert recipes, but you can post any other favorites you have.

I've never cooked/baked anything with pumpkin

I have the traditional pumpkin pie recipe found on the can of pumpkin. I tried making it with fresh pumpkin one year, and it didn't turn out too well. :/

I love everything and anything pumpkin!! I just bought a can of pumpkin last week in hopes that I would make something. I have a couple recipes with pumpkin that I pinned on Pinterest.

I would say my #1 fave pumpkin item is the cream cheese pumpkin roll.

Here's one that looks yummy...

Pumpkin Cheesecake Muffins

MUFFINS:

•1 15 oz can pumpkin
•1/4 cup vegetable oil
•2 large eggs
•1 (200g) cup sugar
•1 teaspoon vanilla
•1 1/2 cups (188g) all-purpose flour
•1 teaspoon baking powder
•1/2 teaspoon baking soda
•1/2 teaspoon ground cinnamon
•1/2 teaspoon ground ginger
•1/2 teaspoon ground nutmeg
•1/8 teaspoon ground cloves
•1/2 teaspoon salt
•1/4 teaspoon freshly ground black pepper

FILLING:

•8 ounces (200g) cream cheese, at room temperature
•1 large egg yolk
•5 tablespoons (75g) sugar
•1/8 teaspoon vanilla extract
•Chopped nuts (walnuts, pecans) (optional)

Preheat oven to 350F (180C)

Mix canned pumpkin, oil, and sugar together, either by hand or with a mixer on low.
Add in eggs, one at a time, combining thoroughly after each.
Add vanilla.

Whisk together flour, baking powder, baking soda, salt, and spices.

Slowly add flour mixture to liquids, combining thoroughly and scraping the sides of the bowl with a spatula until well combined.

Mix together cream cheese, sugar, egg yolk and vanilla until well combined.

Grease your muffin tins or line with paper cups.

Drop in spoonfuls of pumpkin mixture.
Add smaller spoonfuls of cream cheese mixture on top.
Swirl with a skewer.

Optional: top with crushed nuts. Pumpkin seeds (pepitas) are also a great topping!

Bake as follows, turning the tins half way through baking times:

mini muffins: 20-25 min
standard muffins: 25-30 min
jumbo muffins: 30-40 min

There are so many delicious, sweet pumpkin recipes for desserts, pies, cakes, cookies etc.

I'd love some salty recipes like pumpkins soup, appetizers or even main dishes that use pumpkin without sugar. Maybe even some with habanero pepper, lime and cilantro. Is this possible ?

I did that easy recipe on Pinterest where you mix a can of pumpkin and yellow cake mix and that's IT. And you make muffins.....DON'T DO IT!!!!!!!!!! IT WAS GROSS!!!!!

We went to a pumpkin patch today and they had pumpkin salsa!! It was really good!!

I LOVE the pumpkin roll thing on the can of pumpkin. It's soooo good. But, since I'm being good about losing this baby weight (yep, still from Connor! ) I found a skinny one I'm going to try out:

I've done this but with chocolate cake mix and they're delicious! They taste like yummy chocolate muffins but have none of the fat from oil and eggs.

LOL. I saw that one on there...and a lot of people commented that they went ahead and added eggs, oil, spices, etc, and they were way better.

Pumpkin can is still in my pantry lol
I'll have to check out some of these recipes!

We're carving pumpkins tomorrow so we will be roasting the seeds (yum!). I really want to make pumpkin cookies or muffins though...
