This meal is loaded with veggies, plus chicken so it's tasty and healthy. I make it over brown rice, you could use white or any type of noodle too.
2 boneless, skinless chicken breasts (I buy marinated ones from the meat dept.- I used lemon pepper flavor)
2-3 celery stalks thinly chopped
2-3 large carrots thinly chopped
1/2 red onion chopped
1 green pepper chopped
1-2 cups fresh or frozen pea pods
Stir-fry seasoning packet
Heat 1-2 tablespoons of oil in a large skillet, add cut up chicken and cook until no longer pink. Add the chopped veggies and cook 1-2 minutes. Add the seasoning packet (mine calls for it to be mixed with 2 T water- follow the package directions). Pour over chicken and veggies, stir. Cook on low/simmer while the rice cooks.
We had this for supper tonight and while it does take more time than the bagged stir-fry mixes it tastes so good and makes plenty.
