2 lbs boneless chicken breasts
2 cans chicken broth
2-3 cans (approx 48 oz) Great Northern beans w/juice
1 medium onion diced
2 tsp garlic
2 tsp cumin
1 tsp oregano
1 can green chilies
salt and pepper to bake chicken
Mont. Jack shredded cheese to top and tortilla chips
Salt and pepper chicken breasts and bake for an hour at 350. When done, either cube or shred (I prefer mine shredded).
In stock pot, cook onion and garlic in chicken broth until onions are soft.
Add spices, beans, chilies, chicken and simmer for an hour over low heat.
Serve with Mont. Jack or any cheese you prefer and tortilla chips/strips.
