I made this today to eat during the football games. This is our favorite chili now days and it is SO easy to make. I do get the low or no sodium tomatoes and beans though, because we are trying to watch our sodium. The recipe says to simmer for 20 min. That is a good minimum, but I will often make it an hour or two ahead and just let it simmer and mix flavors. Yum!

Makes 5 Servings

1 teaspoon vegetable oil
4 cloves garlic, chopped
1 ¼ lbs lean ground turkey
Two 16 oz cans pinto or kidney beans, drained and rinsed
One 16 oz can stewed tomatoes (or substitute another diced if you don’t like stewed)
Two 14 ½ oz cans diced tomatoes
One 4 ½ oz can diced mild green chiles
2 Tablespoons chili powder
1 teaspoon paprika
1 teaspoon dried oregano
¼ teaspoon crushed red pepper flakes
½ to 1 teaspoon Tabasco sauce (optional, I don't like too spicy, so I don't add this)

1) Heat the oil in a 4-quart pot. Add the garlic and turkey, and cook over moderate heat stirring frequently to break up the turkey until the turkey becomes lightly browned.

2) Add the remaining ingredients and bring to a simmer. Cook, uncovered, for 20 minutes.
