This can be made a variety of ways, however the way I love it is...
2 avocados (not too ripe)
1 can of corn (drained)
1 can of black beans (drained)
1 container of cherry or grape tomatoes
1 bushel of fresh cilanto
1 red onion
Dice all the veggies up and put in bowl. Chop the cilantro up and add to bowl. Squeeze lemons and limes over the mixture in the bowl. As I said you can add more or less of whatever you like... sometimes I will add more black beans or corn depending on my mood. When you are done mixing everything together put in fridge for 30mins-1hr hour before serving. I serve it with tortilla chips. Yum!
