I feel like we eat spaghetti, cheeseburgers, salt-and-peppered steak, and sloppy joes all the time. I prefer beef over chicken, but I'm getting bored. Any good suggestions??

You can stuff it. Get a thick cut and stuff it with something like blue cheese (IMHO that is the best cheese for steak) or maybe some mushrooms.

Cut it up into thin pieces and use it instead of Taco meat.

Slice and do a stir fry. Add broccoli, carrots, onions...

Small cube it and make fried rice....

Slice it and add it to ramen noodles and make poor man's low mein. Add some veggies.

Make rouladen. It is German and so yummy! Rouladen: German Beef Rolls Stuffed with Bacon and Pickles | Choosy Beggars

How about make a pot pie with beef? You can use pre made pizza dough (like in the can)

Or how about Chicken fried steak?

Make a form of cottage pie. Most Americans call it Shepards pie. Instead of hamburger you can cube up the meat.

What about beef and veggie kabobs? You can serve it over rice, couscous or something.

How about Beef stroganoff? I make mine with beef chunks.

You can also get a thin steak, pound it out flat (lol I use cans in a plastic bag) and then put some ricotta cheese, beef seasonings, spinach and sometimes a tomato and roll it up. bake it an then slice it.

how about add beef (hamburger or chunk) and use it ti make stuffed tomatoes or stuffed bell peppers?

That is all I can think of off the top of my head.

My latest beef favorite is beef stew in the crock pot.

1lb stew beef (the kind that's already cut into chunks at the store)
1 packet dry onion soup mix
1 carton (32oz) beef broth (i use swanson's 50% less sodium)
about 5 small/medium red potatoes, cut into about 1 inch chunks
1lb bag baby carrots
1/2c onion, thinly sliced
2 Tbs cornstarch

Mix everything in a crock pot/slow cooker, cook on low for about 8 hours. It helps to mix the cornstarch with a little of the beef broth or water to disolve before mixing in with everything else, so it's not lumpy. I usually serve over rice, but it's really not necessary since you have the potatoes in it.

I actually just put this in the crock pot for dinner tonight!
