1 Large Cucumber
Red Wine Vinegar
Salt and pepper
8 oz package of cream cheese
Peel and remove seeds from cucumber
Chop cucumber and place in bowl
Poor vinegar over cucumber so the chopped pieces are totally cover
Let the cucumber soak for one hour
During this time you make want to take the cream cheese out of the fridge to soften
Once the hour is up drain the vinegar from the cucumber, make sure you drain well
Mix drained cucumber, softened cream cheese, celery salt, salt and pepper together.
You can serve right away or place back in the fridge until you are ready to serve.
Some of my friends will put the cucumber in the processor but I like the crunch of the chopped cucumber. I also serve the dip with wheat thins, but I'm sure any cracker would be fantastic! Enjoy!
