The balls sound gross but they were YUMMY!

Take a boneless, skinless chicken thigh and lay it so the bone would have been is up. Open up the thicker end a bit by cutting from the inside to the outer side but do not cut all the way through. Over 3/4 of it lay a single layer of fresh spinach. Sprinkle a little bit of cheese (I used grated parmesan. The real stuff, not the powder). Lay down one more layer of spinach. Roll the spinach end tightly to the just chicken end. Secure with 2 toothpicks.

Pat with paper towel to make sure chicken is dry. Dust with a coating of flour. Dip in egg. Roll in Panko. Gently place in hot oil until golden brown. Then Flip it over. When both sides are golden take out of oil and set on paper towel and pat to get off access oil. Then place chicken on an ungreased cooking sheet and cook for 15 minutes at 350*.

Rice A Roni balls....

Cook Rice A Roni as directed. At the end of cooking, add in 1/4 cup cheddar cheese. Allow it to melt and mix well. Allow it to cool. Once cool enough where it will clump together, form into small balls. Roll small balls in panko. Fry in oil until golden brown. Pat off excess oil.

YUM! I'll have to try this!

And hehe, it's in a bento box! There's a store in town here that sells the most adorable bento boxes! I'm going to get one for myself. They also sell these oh-so-cute plates. Some have bunnies on them and others have pandas. Since I'm having a boy I'm going to buy two panda plates for me and him to eat off of when he gets old enough to eat off a plate Or maybe I'll get a bunny and get him a panda.

But that would be fun to make this stuff and then put it in a bento box.

And you're right, the rice o roni balls don't sound too appealing, but I'll bet my middle sister would love to try them.

I think I'll suggest this recipe to my mom (the chicken one).

Oh! Have you ever had baked chicken that was covered in potato flakes? Like those flakes from instant mashed potatoes? It's pretty good. You need to add seasoning, obviously, but it's got a lovely light crispy texture.

I have! I actually keep a box of potato flakes to use just for that.

What? you have a store that sells bento boxes????? I am so jealous! Even the really awesome Asian store 45 minutes away does not sell them. I have to order the few I have online. I would like one for each of the minions plus some more for me. I use to have a collection of 15 before my ex split... *sighs* I only have 3 right now. The minions have eaten from them before and they love it.

Yeah, the Rice A Roni balls were on a whim. Like I said, add some more cheese. Also do not make them to thick. They are actually pretty good! I was surprised. They tasted pretty good cool.

I'm going into town after I get up for my appointment at the birthing center. I will happily stop by and take pictures of the bento boxes.

They have cute ones for kids and pretty ones for women. I didn't see any that a man would like, though. But I guess the store's demographic is more for women.

It's a store called If Only. They sell a lot of imported stuff. The section they have the bentos has loads of gorgeous saki sets (my favorite being the ones with sakura petals on them), chop stick holders (they have a bunny, a sumo wrestler, a cute polar bear and some others), those bunny and panda plates I mentioned, and some nice chop sticks. I think they have a few other things, too. I always want to buy stuff from that section but I never have money when I go in.

For some reason all I can remember of the bento boxes are the ones with the sakura on them. They have them in at least three different colors. But I remember two kid bentos, I just don't remember the designs.
