I just found this recently and tried it today. It is sooo good!
6-8 medium ears fresh corn
1 large onion, diced
1 jalapeno pepper, diced (adjust amount to your preference)
2 cloves garlic, minced
1 cup mayo
1/2 cup sour cream
1/2 tsp chili powder
2 cups shredded cheese
sliced black olives and green onions for garnish
Shuck/silk corn and grill 10-12 minutes or until tender (or if you prefer, it can be boiled, grilling just gives it more flavor). Cut the corn off the cob.
Saute onion and jalapeno until almost tender, then add the corn and garlic. Continue cooking until vegetables are tender.
In the meantime, mix mayo, sour cream and chili powder. Add corn mixture and cheese. Pour into greased 2 qt casserole dish and bake at 400 for 25-30 minutes until golden and bubbly. Serve with tortilla chips.
