*This is a favorite of Tim's as well as his brothers and father. It is def a comfort food dish*
Need-
either a whole chicken or a roasted one from the Deli department at the grocery store *personally I use the deli chicken, if you use the whole chicken boil it whole until cooked*
1 can of cream of something
1 cup of flour
1 stick of butter, softened
1 cup of buttermilk **if you dont have buttermilk regular milk can be used but you will have to add extra flour and butter to it to make it thicker*
Directions-
* Preheat oven to 350
* Remove meat from the chicken, I recommend tearing it since it makes it similar to shredded and a better pie filling
* add can of cream of whatever and mix
* Place chicken mixture into a baking dish
* In an separate bowl combine the flour, butter and milk to make a batter
* Pour batter on top of chicken mixture, make sure it covers evenly (if you dont use buttermilk it will look like its seeping into the mixture and a little of this is fine)
* Bake until browned about 45minutes to an hour or so

Serve with mashed potatoes and veggies


This recipe has become the go to recipe for me and my sister in laws for anniversary/birthday dinners for the Mixon boys lol

Does it matter what type of "cream of" soup you use? like there's chicken, mushroom, potato... a million types.

nope I have made it with cream of mushroom, cream of chicken, cream of broccoli...it is just what you prefer
