I just made this Cheesy Rice and Beans dish for the first time tonight and had to share it with you all! It was so easy and oh so good.
Of course, being that I can never follow a recipe exactly, I made a few changes! I used mild salsa in place of the tomatoes, and I omitted the onion to skip the cooking step. I just made the rice in my rice-maker (3/4 cup uncooked) and then mixed with the drained and rinsed beans. I also used pinto beans with white rice since that's what we had. I was very liberal with the cheese ! Baked for 20 minutes covered, then 15 uncovered at 350 degrees. I didn't add any cheese at the end though, just put it all on top in the beginning, lol.
This is definitely going to be a meal we make in the upcoming weeks to freeze ahead for when baby gets here! The best part is how good and filling it is, yet very cheap to make!
