I don't know if you'd like this or not but I've done pickled eggs before. You take hard boiled eggs and let them sit in the pickle juice at least 24 hrs (longer if you want them stronger tasting - I usually try and do at least 48 hrs) and keep them in the juice until you're finished eating them. They are great plain or in salads on sandwiches - anything you'd put hard boiled eggs on.
