Anyone have any ideas on how i can use left over pickle juice once the kids have eaten them all?

I don't know if you'd like this or not but I've done pickled eggs before. You take hard boiled eggs and let them sit in the pickle juice at least 24 hrs (longer if you want them stronger tasting - I usually try and do at least 48 hrs) and keep them in the juice until you're finished eating them. They are great plain or in salads on sandwiches - anything you'd put hard boiled eggs on.

I like to marinade chicken breasts or fish in it. You can also pickle other veggies in it. You can also make salad dressing or add it to stuff like BBQ sauce or mayo.

Those are great ideas, never thought about the egg one and for sure that sounds super du-able since soft boiled eggs are my quickie snack food.

am defo gonna try the marinade with salmon. since i put dill on it anyways. and the chicken in pickle juice just sparked my appetite.

I love slicing cucumbers and putting them in the pickle juice. Quick and very crisp new pickles, just the way I like them
