It seems like everyone who responded to the Thanksgiving thread mentioned pumpkin cheesecake as their favorite dessert. I have never tried it, but I'd like to make it this year! Anyone have a good recipe I should try?? Thanks!

Recipe Details


Double Layer Pumpkin Cheesecake

8 Servings, Prep Time: 30 Minutes, Cook Time: 40 Minutes

Description

A great alternative to pumpkin pie, especially for those cheesecake fans out there. Serve topped with whipped cream.

Ingredients

2 (8 ounce) packages cream cheese, softened
1/2 cup white sugar
1/2 teaspoon vanilla extract
2 eggs
1 (9 inch) prepared graham cracker crust
1/2 cup pumpkin puree
1/2 teaspoon ground cinnamon
1 pinch ground cloves
1 pinch ground nutmeg
1/2 cup frozen whipped topping, thawed
Directions

Preheat oven to 325 degrees F (165 degrees C).
In a large bowl, combine cream cheese, sugar and vanilla. Beat until smooth. Blend in eggs one at a time. Remove 1 cup of batter and spread into bottom of crust; set aside.
Add pumpkin, cinnamon, cloves and nutmeg to the remaining batter and stir gently until well blended. Carefully spread over the batter in the crust.
Bake in preheated oven for 35 to 40 minutes, or until center is almost set. Allow to cool, then refrigerate for 3 hours or overnight. Cover with whipped topping before serving.

Yep! I have it saved in my favorites! Some of the reviews suggested using pumpkin pie filling instead of purée, so I'm thinking of doing that.
I'm optimistic about it. It has to be good. I don't think I've ever had a truly bad tasting cheesecake.

I don't have my Mom's recipe here at work, but I'll get it this evening when I get home! My mom's recipe is delicious. I just absolutely love it. I am not a pumpkin pie fan except for my mom's.

I am so not a fan of pumpkin flavored anything, but last year my mom made these pumpkin cupcakes and they were so awesome. Sarah and I are making some this year.

I made it last year but it's a family recipe & I seemed to have lost it. lol
Luckily, I'm not making it this year, another family member is. All I know is it's yummyyy!

I'd love to see the recipes for the pumpkin cheesecake and pumpkin cupcakes too! I love anything pumpkin!!

My SIL makes pumpkin cupcakes with cream cheese and cinnamon frosting.

She seriously uses the box mix of pumpkin cupcakes and adds pumpkin to it. But I can't remember how much. All I know is they are delicious especially for being a box recipe!
