Breakfast is pretty inviolate for me, and pretty easy to get down: English muffin and a big glass of milk. Only one day could I not get that down and had some mashed potatoes instead. Lately I sometimes have a little cheese too as I need something more. On the weekends I might let DH cook me an egg too...but that's hit or miss as to whether I think I can handle that.
It depends on whether I'm working from home that day or not. If at home, I'll usually make an egg white omelet with whatever veggies and whatever protein I have on hand (usually some combo of peppers, onions, tomatoes, spinach and mushrooms, plus either turkey/chicken sausage or turkey deli meat). If working away from home, it's typically something I can just grab from the pantry/fridge and take with me - which means either a fiber or protein bar, plus some greek yogurt (if I'm going to be sitting in the office) or some sliced apples (if I'll be in the car).
