I can't crochet, knit, or anything, but I do make sure they all have a keepsake box. My DD LOVES going through hers. It's actually a lot of stuff from when they were born...their hospital bracelets, balloons/cards, anything else from the hospital, pictures, etc.
I'm writing a journal for him and her through my pregnancy and through the first year or so of life and will give it to them when they get older. Dh's mom did that for him and it is something he really treasures.
I'm doing the journal thing myself. It's....it's probably not what my kid is gonna expect (or even what my husband is expecting me to gift our child with) but I'm having fun with it and I'd like to think it'll be useful to them at some point.
Same as some other ladies, I am writing in a journal, and going to crochet a blanket shaped like a star. Have not started the blanket because I want to know the gender first so I can pick out cute colors for it.

When I was born, one of my aunts made me an adorable cross-stitch with my name, weight, and birthdate along with teddy bears, blocks, and ducks. I'm using that as a template to make one for my baby!
I'll be doing a similar little cross stitch- I did one for DD too. I have started a scrap book for dd, and have every intention of finishing it (someday), so I'll probably do one for this baby too. And the little memory box.... and a quilt.... My problem is that I want to do everything. I have done many things for dd, and now I feel like I should probably do all those things for this kiddo too so he/she doesn't feel left out. And just because I love to craft and make cute stuff
One of the first things I did when I found out was go out and buy a nice journal. I've been making entries every few days, and I plan on writing in it when I can until it's full. I do have two pregnancy journal books too though.
