We are doing a cookie/candy exchange at work and I decided to try to make fudge in my slow cooker. I am in love. It tastes like dark chocolate heaven. I need to pace myself, I could probably eat the whole batch in one sitting with a glass of milk. I'll put the recipe in our Confectioner's Cookbook.

This recipe is really easy since it's in the slow cooker. Just pour in the ingredients and let it cook for two hours. Then uncover, stir, and let sit for a few hours. Then pour into a dish to refrigerate for four hours. Really simple.

I like the thought of this cooking in the crock pot while I'm doing other baking.

I just made penuche (brown sugar) fudge last night from scratch! Just white & brown sugar, butter, milk & cream, and salt all boiled to the soft ball stage, then add vanilla extract and cooled (not quite) to 110*, stirred (adding walnuts to half) and in the fridge to set. It has a very small grain and some crystals on the top, but dang it was delicious!

I'm going to make my layered "cheater" fudge with the mint tonight so I have some to bring in to coworkers for tomorrow. Yum!!!

So I ended up making this with a mixture of milk chocolate and peanut butter chips...turned out well! My DH liked it, although he wished I'd put in more peanut butter. Maybe next time.
