Just gonna brag a little and say I made fresh egg salad from scratch. It's not hard, but a little tedious peeling all those eggs. But man, is it worth it...the first bite was heaven. Haha. I had been wanting it for a few days now, so it was perfect. I was eating it with Ritz crackers but went aw heck, they are just getting in the way! And now just eating it with a spoon. lol
Sounds so good! About a month ago I attempted to make some egg salad but I didn't boil the eggs long enough. Prepregnancy I wouldn't have had a problem still using them (they were only just undercooked but I'm too paranoid to be taking any risks right now You are making me want to make a second attempt!
Erin, I guess that was a little redundant...if I said I made egg salad, I guess I didn't need to say I made it from scratch! LOL Far as I know the store doesn't sell shredded hard boiled eggs...
MrsLisaT, if your eggs come out undercooked, you can still put the eggs back in the pot to cook for longer, even if you already peeled them. That way you could still use them even if they came out undercooked.
