I hear this is officially egg salad week So who is using up their Easter Eggs. I know I just packed my lunch for today. Any egg salad sandwhich. Tomorrow is likely a green salad with egg on top!

Mmmm....great idea! Our girls like to eat their eggs as snacks. But if they aren't gone within next two days...I'm pulling rank and making me an egg and avocado salad sandwich! Yummy!!!

I made deviled eggs as an appetizer for Easter dinner. Those are guaranteed to go fast in this house. But we only dyed a dozen eggs so there weren't that many to use up.

I made a big salad last night and put 3 of our eggs in there. I usually don't eat eggs but at Easter time I get a craving for them I brought some salad left overs for lunch and am getting hungry just thinking out it...

I'll probably do deviled eggs after we get around to dying the dozen eggs we never did. I ended up only hiding plastic eggs bc of time constraints and a very busy week. But maybe today, we'll finally dye them and then I'll use them in something.

We made deviled eggs on Easter. With my family.... deviled eggs don't last very long lol. They were all eaten before Easter dinner was even served. I was kinda bummed because I was looking forward to an egg salad with avocado too!

Good old hard boiled eggs and deviled eggs, and ours are nearly gone. I'm thinking of making tuna salad tonight to use up the last couple in the fridge.

LOL I just finished a huge sandwich from a batch I made today. Not from the eggs we dyed--my food coloring was super expired so I didn't feel okay eating them and just let DD play. But since eggs were so cheap this week we have a ton leftover that didn't get dyed (I didn't want to waste them just to throw out so I only dyed 8) and I just made an enormous amount of egg salad. It goes fast in this house, too.

I honestly hate deviled eggs and egg salad but I like hard boiled eggs in a green salad or just dipped in some ranch.
