I love fall foods... soup and the crock pot become by best friends when the weather cools down. I know we have a forum for recipes, but I don't know how often we check it. What's your favorite (but EASY!) fall recipe??
I'll share Crock Pot Pizza:
These are the layers from bottom to top:
1. One pound ground beef browned with small onion
2. One pound rigatoni cooked al dente
3. 28oz pizza sauce
4. Two pounds shredded mozz. Yes, you have to use the whole 2#!
5. Top with pepperoni or other pizza toppings
Cook on low 4-6hours
Pastry for single-crust pie (9 inches)
2/3 cup sugar
3 tablespoons all-purpose flour
1 teaspoon ground Cinnamon
4 medium apples (like Gala, Fiji, Braeburn, Empire) peeled and diced into 1/4 inch pieces
1/2 cup all-purpose flour
1/3 cup packed brown sugar
1/2 cup old-fashioned rolled oats
1 teaspoon ground cinnamon
1/4 cup salted butter, softened (see Note)
1/2 cup caramel topping
1.Note: I like to use salted butter because it cuts the sweetness of the pizza. If you don't use salted butter sprinkle some salt on top of the crisp. Trust me. It brings out the flavors.
2.Preheat oven to 350 degrees.
3.Roll pastry to fit a 12 inch pizza pan; fold under edges to give the pizza a bit of a raised crust. Combine sugar, flour and cinnamon in a medium bowl. Add peeled, diced apples and toss. Arrange the apples in a single layer over the pie crust to completely cover it. I didn't use all of my apples because I had really big apples.
4.For the topping: Combine the flour, brown sugar, oats, cinnamon, and butter in a bowl. Mix well. I like to use my clean hands to get in there and mush it together until it's the texture of wet sand. Sprinkle topping evenly over the apples.
5.Bake at 350 degrees for 35-40 minutes or until apples are tender. Remove from oven and immediately drizzle with caramel topping. Cut into pizza slices and serve warm with ice cream. Makes 12 servings.
I didn't use caramel toping I made a frosting glaze by adding extra milk to this frosting recipe :
I am just going to type my chili recipe from memory, I made it this morning.
The chili is not exact, you can mix things up
Lazy person's quick chili
1 can light red kidney beans
1 can chili beans
1 can condensed tomato soup
1 large can I think 29 oz of tomato sauce. Hunts makes a seasoned one but can't always find it so regular is fine
2 cans chili ready tomatoes - I usually get two different ones
v-8 hot and spicy - regular v-8 if you don't like spicy
1.5-2 lbs ground beef depending on preference. We always use at least 2 lbs
small onion - optional
green pepper - optional
crushed red peppers
Brown ground beef - add diced onions and green peppers when you brown it if you are using them
Drain and pour in crockpot
Open all cans and pour directly in crockpot, do not drain, pour all sauces in
Pour in v-8 til you get the consistency you want
Add spices to taste, we like spicy so add quite a bit. Start with less and you can add later as it cooks
Cook on high for about 2 hours or low for 3-4
1 Can Black Beans
1 Can Diced Tomatoes
1 Can Corn
1 Can Diced Green Chiles
1 Can Cream of Chicken Soup
1 Can Chicken Broth
2 TBSP Taco Seasoning
Put all the cans in the crockpot, including all the liquid from the cans. Add 2 TBSP Taco seasoning. Add some shredded chicken. I liked the rotisserie chickens from the grocery store. Set it to low to heat! And that's it!
Then you can top it with tortilla chips, sour cream, avocado or cheese.
