Oatmeal Caramel Bars
2 cups flour
1 1/2 cups brown sugar
1 tsp salt
1 tsp vanilla
2 cups quick oats
3 sticks soft margarine
1 tsp baking soda
Combine above ingredients and press half of mixture into a buttered 9x13 pan. Bake at 350 degrees for 10 minutes.
While crust is baking, combine a 14 oz package of caramels and 1/2 cup evaporated milk in a double boiler. Melt them completely.
Once crust is done, sprinkle a 12 oz package of chocolate chips over it. Pour the melted caramels over the chocolate chips and crust. Sprinkle remainder of oat mixture over the top of the caramel. Bake at 350 degrees for 25 minutes. Cool completely and then cut into squares.
This was my grandmother's recipe and a huge hit with friends and family. Some years I've had to make half a dozen batches. It is best served slightly warm so that the caramel and chocolate are ooey-gooey.
