What is your favorite thing to make during the week when maybe you don't have much time to prepare a big dinner for your family?

Dip! Brown some turkey meat and place in a casserole dish. Mix it with a jar of salsa, 2-3 tablespoons of sour cream and top with fiesta blend cheese. Bake in oven until cheese melts and serve with tortillas YUM!! Super easy and fast maybe 15 to 20 minutes to complete and it's addicting!

We have 3 that are always hits and are pretty easy and about 30 min or less to make:

1. Home made chicken nuggets and baked fries
Ingredients:
Chicken breast
Panko bread crumb
Mayo or plain greek yogurt
Mustard (flavor of your choice, my kids like dijon or south west)
Seasonings of your choice (favorites here are honey with the dijon, nothing with the south west, or leaving out the mustard all together and seasoning with brown sugar and garlic)
Panko bread crumbs
Oil (preferably spray

-Cut your chicken into nugget or strip sizes
-mix your seasoning, mustard and yogurt or mayo together
-dip the nuggets into the mix
-dredge with panko
-place on well oiled cookie sheet
-Spritz top of nuggets with spray oil for better browning
-Bake at 375 for 20-25 minutes, depending on size

For fries, I just cut up potatoes, toss in seasoned oil and spread on heavily oiled cookie sheet, bake at 425 for about 40 minutes until cooked through and crispy on the outside.

2. Apple Cheddar Turkey Mini Meatloaves
Ingredients:
20 oz package ground turkey
1 granny smith apple
1 medium onion
1 tbs minced garlic
1/2 c. shredded sharp cheddar
1 egg
1/2 c. panko bread crumbs
Salt and pepper to taste

-grate apple and onion with a box grater
-mix apple, onion, garlic, egg, cheese and seasonings well
-add turkey and mix by hand, gently
-add panko and mix in throughly but gently
-Divide the mix into 8 equal portions
-Shape each portion into a miniature loaf and place on a foil lined baking sheet (make sure the sheet has edges, free-forming the loaves make them less greasy but the juices will flow and make a mess in your oven if you use a sheet without edges)
-bake at 350 for 22 minutes or until cooked through

We like to have this with sweet potatoes and peas

3. Quick spaghetti "bolognese"
Ingredients:
1lb ground beef, browned and drained
1 onion, diced
3 TBS minced garlic
1 regular sized can of tomato sauce (I like Hunts, it's the least seasoned so I can customize for my family's preferences and the taste is consistent and reliable)
1 small can of tomato paste
1/2 can of milk (about 8 oz)
2 scant tsp Worcestershire sauce
3 TBS cocoa powder
Oregano, basil, salt and pepper to taste
olive oil for pan
1 box spaghetti noodles
Parmesan cheese for garnish

-Sauté onion and garlic in olive oil
-add browned ground beef back in
-Stir in Worcestershire sauce, cocoa and tomato paste, distributing equally
-Pour in 1 can of tomato sauce and then fill that can 1/2 full of milk and pour that milk into the pan
-Stir together and let simmer while you boil the noodles
-Adjust the seasoning to your taste and serve over noodles with parmesan cheese

We serve this with country bread and a salad

These are my quick "go to" meals.

Orange chicken and steamed rice.

Breakfast for dinner.

Spaghetti.

Quesadillas. I usually dump chicken breasts in the crockpot in the morning with a half jar of salsa. Use the chicken and cheese to make awesome quesadillas. Serve with sour cream and guacamole.

The way I make my sweet potatoes is the only way I can eat them. Just take them, boil in chicken broth and garlic until almost all the broth is gone, then mash them up. SOOOOOO good.

I may need to try that PhD!

Our go tos are:

Kind of a homemade hamburger helper that my husband and the kids LOVE (I like it but I don't eat the meat):
It's so simple--
A can of brown (beef) gravy (I use a really big can, or even 2)
Egg noodles (we need 2 bags for 5 people)
Hamburger meat
~brown the meat, drain
~cook noodles while you're brownie the meat, drain noodles and put them back into their pot
~Add the meat back to the pot you browned it in, add gravy and mix. Let it simmer for a few minutes to get hot. Stir.
~Add the meat/gravy and add it to the noodle pot and stir it all

I'll have to think of some more, I make a lot of quick things but nothing's coming to mind lol

You ladies are all way less lazy cooks than me! My answer is more like, "Tell hubby to go to the Chinese place down the street he likes so much, and make myself a baked potato." And then there's almost no dishes!

Usually a sausage and mozarella pasta is our easy peasy go-to if I don't meal plan. Also love anything that will fit in my crock pot
