I'm having problems with fasting, and with breakfast. I've tried eating and not eating a snack at night and it's slightly lower if I don't eat. I seem to have to keep my carbs under 30 at all meals to keep my level close to the boarder and not go over, except breakfast, it seems any carbs over 5 spike my sugar over 150 (including starches/dairy). I am out of things I can eat, and am fairly sure I'm eating under 1000 calories a day, my stomach is growling almost all the time. Eggs & cheese were good at first, but they are starting to make me sick. I'm out of ideas....

I know how you feel - I am always thinking about food!! I have to eat something every 2-3 hours. My endo wants me doing 30g of carbs per meal/snack, so at least I get to have pretty filling snacks.
I would starve to death if it wasn't for high-protein granola bars. Almost every morning I have a South Beach Living hi-protein cereal bar for breakfast (12 net carbs, 10g protein) and many days I have a Kashi granola bar for a snack - they usually have 6g to 8g of protein and around 15-20g carbs, and are perfect for on-the-go snacks.
I've found some lo-carb tortillas that have 5g net carbs and 5g protein. You could try doing a breakfast wrap with one of those for a change - add some egg, cheese, peppers. Or you can skip the egg and add black beans instead and make it into a quesadilla. You can try using soy cheese, as the flavor is a bit different from regular cheese (it's good, just different). Just don't use rice cheese, because it has no protein. I often do a black-bean and cheese quesadilla for my night-time snack and have never had a bad fasting number the next morning. I have it about an hour before going to bed.
Sometimes I end up having an extra snack during the day - so I'll have 4 snacks instead of 3. I just make sure that extra snack is around 15 carbs.
It's hard. I don't think I will eat peanut butter, nuts, eggs or cheese for awhile after the baby is born!
