Testing one hour after meals

Quick question for you all...

This is my second pregnancy with GD. I've learned a lot about it, but there are some things I still wonder about.

When you test an hour after your meal, is that from when you start eating or when you finish eating?

I eat rather quickly, I'm usually done in fifteen minutes. But I was reading about some things about how the bread carbs like pastas, rice, bread, etc. actually hit their high at 45 minutes and then come down.

This was proven tonight: I had 6oz of grilled pork chop, 1/2 cup of peas (1carb) and 3/4 cup of couscous (2carbs). I finished my meal about fifteen to twenty minutes after starting, and I ate the majority of my couscous at the end. I tested an hour after the start of my meal and was at 159....which seemed really high for what I ate. I tested again 15 minutes later.....100.

So if you hit a high 45 minutes after eating, then it would make sense to test an hour after your meal is finished, right?

I was told to test one hour after starting (seems they want to catch the high numbers).

im living at the hospital and they test me one hour after i start eating

This is my second time with GD and both times I was told to test two hours after I finished eating

I was told by my endocrinologist to test exactly 1 hour after I put the first bite of food in my mouth. Now with my first child I tested after 2 hours, and my OB this time also wanted 2 hour readings. I go by what my endo tells me.
