We are part of a CSA and this week's veggies are mostly all new to to me. Anybody have any recommendations for the following?

Sweet Onions, Brussels Sprouts, Fennel, Beets
Watercress, Chinese Broccoli, Swiss Chard

I've made brussel sprouts before, but that's about it! Beets once, but I remember it may have been a disaster. I am an intermediate cook. Any info is appreciated!

so far I think I have settled on:

Florence Fabricant's Leek, Mushroom and Goat Cheese Tart - The Wednesday Chef
Jill Santopietro's Braised Fennel with Meyer Lemon and Parmesan - The Wednesday Chef
Alice Waters's Swiss Chard Gratin - The Wednesday Chef

All new foods for me so I'm trying to figure out easy ways to ease into it. It doesn't look like any meals out are in our future!

If you don't use all the goat cheese for the tart beets are good with goat cheese. Beets are also yummy boiled to soften them, then splashed with some red wine vinegar and salt.

That's a good idea - I think I can cook the beets and put on top of the watercress (so says the internet) - goat cheese may make these things seem more familiar to me! I <3 goat cheese.

We grew brussel sprouts over the summer and my favorite way to eat them was with oil, salt, pepper and garlic, roasted in the oven. Haven't eaten any of the other veggies above!

shaved fennel in a salad with orange and arugula + goat cheese optional

chard-- saute it with garlic/salt/coconut oil- eat it like that!

or use the leaves as tortillas and make spring rolls out of them- roll them up around shredded veggies, lettuce, hummus, sprouts.

beets- juice them! good for baby!
