I made these collard greens in the crock pot this past week. Holy.cow!!!! THE most tender collards I have ever eaten. Bryan and I couldn't get enough!

I made the most amazing vegan noodle casserole for lunch today. It totally hit the spot; amazing, since it's vegan! but its very "comfort food"ish, even without dairy!
I added some canned mushrooms and a few more than the 1 cup, that the recipe calls for, of peas. For noodles, I used ribbed elbows. Delicious!!

Yay. Let me know what you think! I absolutely love it and so did Bryan!! And, it makes enough for about 3 days. Lol. It's a 9x13 pan, full to the brim.

So this isn't really a recipe per say but it is SUPER healthy, full of protein, quick and yummy.

Get a piece of whole wheat toast, spread natural PB on it, top with chia seeds, hemp hearts, cinnamon, and honey.

I seriously have this for breakfast every day and it's delicious. The chia seeds expand once they get into your stomach so they help keep you full longer. (I sprinkle them on everything!)

I put chia and hemp hearts on everything too... but i dont use honey, so i'd have to use maple syrup or agave. But that sounds like an awesome idea for a bfast. Thanks!
