I just made 6 jars of raspberry/blueberry/peach freezer jam (raspberries from our yard, fresh local blueberries and peaches). It is SO delicious!! I'm eating toast with butter and fresh jam for lunch today

That sounds so good! I've not really been craving anything sweet, but I totally hadn't thought of jam. A trip to the grocery store may be required now!

Oh yum! I love homemade jam, I really hope my mom's raspberry and gooseberry bushes do well this summer so that we can do some canning. Last year we got 9 berries off the raspberry bush (yes, only 9 individual berries from a huge bush) and we have no idea what went wrong!

Yum! I need to start making my own jam.

Next berry season, for sure! (I tell myself this every year. )

Sounds so good! I've never tried to make my own jam - is it hard?

Freezer jam is SO easy. The one that I made was 1C mashed raspberries (meaning you measure out the mashed berries, not the fresh), 1/2C mashed blueberries (mash first, then measure out), 1C peeled cored and finely chopped peaches, 4.5C sugar, 3 Tbsp fresh lemon juice, 1 package of Certo liquid pectin (they come in a 2 pack at the grocery store).

Mash up all the berries in a bowl and add the peaches. Mix together, and if you want a smoother consistency, you can do a quick whiz with the hand blender. Add the sugar and mix it up. In a separate bowl, combine the liquid pectin and lemon juice. Add the pectin mixture to the fruit and stir for at least 3 minutes until the sugar is no longer grainy. Pour into plastic jam jars, leaving about a 1/2 inch at the top. Leave at room temperature for 24 hours, then freeze or refrigerate. If frozen, jam lasts 1 year. Approximately a 1 week shelf life in the fridge. Makes 6 jars.

If you buy the Certo liquid pectin, there are a ton of freezer jam recipes in the insert. They all basically use some combination of fruit, sugar, pectin and lemon juice. I love freezer jam, because you don't have to cook it!! There are also pectins out there for making low sugar jams, but I haven't tried those yet.
