1 box whole wheat penne pasta
2 zucchini (sliced in disc's)
1 can (undrained) diced tomatoes
(optional) a few slices of tofu
Boil water for pasta. While that is cooking, heat EVOO in a pan over medium heat. Once heated, add zucchini (cook for 4 or 5 minutes). Add diced tomatoes (undrained) to pan. Lower heat to low-meduim. Cook for 6-7 minutes or until juices are basically all evaporated. Add tofu if desired. Once cooked through, mix with drained pasta, garnish with basil and enjoy!!
