Does anyone have any good crockpot recipes? I only have my book that came with the crockpot and they are all kind of boring. Need some new healthier ideas.

I have a crockpot chicken recipe that's pretty good. Take chicken breasts and sprinkle them with taco seasoning (about half of a packet), then pour a cup of black beans (I usually use most of the can since I don't know what else to do with them) and a can of rotel over them. Cook on low for 6-8 hours or high for 4. I serve it either in taco shells or with tortilla chips. It's SO good!

This recipe is also really good, although unless the beef is really lean it's not super healthy. I shred it then put it on hoagie rolls and top with provolone cheese and toast under the broiler until the cheese is melted. YUM!

Ingredients
-3/4 cup water
-1/4 cup beef broth
-1/2 teaspoon of the following:
salt
ground black pepper
dried oregano
dried basil
onion salt
dried parsley
garlic powder
-1 (.7 ounce) package dry Italian-style salad dressing mix
-1 (3 pound) chuck roast

Directions:
-Mix together beef broth, water, spices, and salad dressing mix in a pot on the stove. Bring to boil.
-Place roast in crockpot, pour salad dressing mixture over the beef.
-Cook on low for 7-8 hours or on high 4-5 hours

This is another good one. Again, not super healthy unless you substitute low fat ingredients. I serve it over egg noodles but you can use rice as well or potatoes.

4 boneless skinless chicken breasts
2 Tbs butter, melted
1 can cream of chicken soup
8 oz cream cheese, cubed
1/2 c chicken broth
1 (1oz)packet ranch dressing mix
1/4 tsp minced garlic
1 dash paprika
1/8 tsp dry oregano
1/4 tsp dry parsley flakes


Wash and dry chicken breasts and place them evenly in crock pot. Sprinkle with paprika.
Sprinkle ranch salad dressing mix over chicken.
Drizzle chicken breasts with 1 tablespoons melted butter.
Cover and cook on low for 4 hours.

Melt remaining 1 tablespoon butter with minced garlic and saute slightly.

Add cream of chicken soup,cream cheese cubes, 1/2 c chicken broth, dried oregano and dried Parsley flakes. Stir on med til smooth.

Add mixture to crock pot, cover again and continue to cook on low for 1 1/2-2 hours.

I have a BBQ chicken one...

4-6 chicken breasts
1/4 cup Italian dressing
1 bottle (12 oz) any flavor BBQ sauce (whatever you like)
1 TBSP worchestershire (sp?) sauce

Throw it all in and let cook for an hour or so (once the chicken is cooked). Then, take out the chicken, shred it, and put it back in the sauce to cook for a few more hours. Serve on buns with whatever sides you like. Yum!

DH made pulled pork BBQ in the crockpot today. he takes a big chunk of pork tenderloin and cooks it for hours and hours with apple cider and slices of apples until everything falls apart. then just put in BBQ sauce and put it on a bun. Don't know how healthy it is, but its very good.
