Since DH isnt home enough to buy booze, and I cant get any (1month 4 days to go!!!) I made homemade virgin vodka sauce in my slow cooker and it is AMAZING.
2 medium cans of diced tomatoes (undrained)
1 Pint of Half and Half
Put the diced tomatoes into your slow cooker. Turn it on low. Cook those on their own about 1 1/2 hours. Add half and half, little by little until its as red or pink as you would like it. Cook for another 45mins. Mix seasonings in (I usually eyeball it so its by preference). Cook again for another 45 minutes. Serve over cooked whole wheat pasta. We also used it yesterday as a bread dip, it was soooo yummy!!!!
* you can also sub diced tomatoes for whole peeled tomatoes. If you do that, cook those for 2 hours and break up with a fork prior to adding cream.
