Ladies, I need some ideas for quick, EASY, single-serving lunches. I'm not a great cook at all - about all I know how to make are quesadillas and egg sandwiches. I'm really tired of those now. My DH is a wonderful cook, but he's not home during the day, so I'm left to fend for myself. Anyone got any suggestions??

Here lately I've been doing bologna sandwiches or a can of chicken noodle soup (which i normally hate), I need to pick up a jar of marshmellow creme so I can do peanut butter sandwiches with the marshmellow creme on it (YUM!) or we do leftovers from the night before

Lately I've been having a frozen veggie burger or chicken patty with one of those thin wheat buns. Little mayo, a slice of tomato and a slice of cheese. Very easy and tasty.

I do a lot of canned soups, left overs, and salads. (Salads r my fav right now!) I buy the premixed salad mix, then have containers with my shredded carrots, cheese, tomatoes, cucumbers, cut up meats, etc that I just add to the salad mix quick and top with fav dressing...very quick (and semi healthy)

i love salad for lunch, sometimes i make grilled cheese, tyler eats everythign we eat so i usually am making something for him anyway. Soup is always good (we've been out and i've missed it)...nachos, burritos, the other day i made red beans and rice, i never get too fancy b/c i am in charge of 2 kids under one so its not like i have much time for real cooking. i also like frozen pizza and we eat it for a couple of lunches.

If I'm home I snack all day. If I have to take food to school or something it's usually yogurt, and grapes with cheese. I pretty much just carry 2 or 3 moderate sized snacks with me rather than a meal.

I normally do hot pockets ( ham n cheese is my favorite )
pb&j with chips
or turkey meatballs and salsa

Stuffed baked potato?

Corn fritters?

Salmon mixed with light cream cheese sandwiches?

Cheese toasties?... add pineapple, creamed corn, tomato?

Spaghetti or baked beans on toast with grated cheese sprinkled on top?

Mini pizzas, muffin split topped with cheese, onion, mushroom, tomato sauce, capsicum, pineapple.

Thanks for the suggestions ladies! I think now my problem is that I just need to keep more food in the house, lol. All your suggestions I'm like, well I could make that if I had this in the house. Now that it's getting cooler, I need to make a big pot of chili and just munch on that for a few days.
