These cookies are sooo yummy and good for you! A constipation cure for you ladies that are having that problem
2/3 C Water
1/3 C Quinoa
1 C Butter, softened
1 1/3 C Brown Sugar
1 1/2 tsp Pure vanilla extract
2 C Whole Wheat Flour
1 1/2 tsp Baking powder
1 tsp Baking soda
1 tsp Ground cinnamon
1/4 tsp Salt
1 1/4 C Quick cooking oats
1 C Flaked unsweet coconut
1/3 C Sunflower seeds (unsalted)
1/3 C flax (ground or not, grind if you want more laxative effect, do not for a good intestine cleaner)
1/3 C Sesame seeds
(the last 4 ingreds can be switched to any nuts, seeds or raisins)
Bring water and quinoa to a boil in small saucepan, . Reduce to simmer, cover and cook for 10 mins more. Turn off heat and leave covered saucepan on burner for 6 more mins. Remove lid and fluff with fork. Set aside to cool.
Preheat Oven to 350F
Cream butter with brown sugar
Add the eggs and vanilla and mix well
Combine flour, bk powder, bk soda, cinnamon and salt in med bowl. Add the rest of the ingreds and mix until well blended.
Combine the 2 mixtures and mix well
Roll dough in 1 1/2 inch balls and place 2 inches apart on bk sheet.
Flatten each cookie a little with your palm.
Bake in center of oven for 8-10mins until the bottoms are light brown.
Allow cookies to cool completely on bk sheet.
Store in a sealed container in the refrigerator for up to a week..or freeze for later.
Makes about 5 doz.
