Love, love, love this recipe. It's fresh and pretty healthy (minus the chips, haha) and I haven't met a single person yet who doesn't like it, so do some pregnant hosting!
6 Haas avocados (the small, black Mexican ones)
1 medium sized red onion
2 roma (plum) tomatoes
1/2 bunch of fresh cilantro
-Dice onions and tomatoes; mince cilantro
-Peel and pit the avocados. Make sure they are ripe, you'll know if they are a little soft when you squeeze them gently
-Mash avocados with a fork or in a food processor/blender
-Mix onions, tomatoes, and cilantro with avocado mash then squeeze lime juice in, mix again
-Add salt to taste
-I like blue corn tortilla chips but sub in pita chips for a healthier alternative
