I think freezer meal recipes would be great for when baby gets here! I wish I had done this with my DD's, especially with DD #2 when all she wanted to do in those early days was nurse! I'll post what I have found (I haven't tried these yet) and you can post what you have found/tried! Now to find the energy!!
Chicken Pot Pie (I make this all the time, but I have only frozen it once. It definitely can be frozen. I definitely recommend a disposable pie tin or a cheap one from the $ store)
1 box Pillsbury® refrigerated pie crusts, softened as directed on box
1 beaten egg + 2 tablespoons water
1 cup of chicken broth
2lbs of cooked chicken, shredded
1 cup frozen mixed veggies, thawed
3/4 cup of milk
2 tablespoons of flour
2 tablespoons of butter
Seasonings to taste
Make a white sauce by melting butter and adding flour. Stir for 1-2 minutes, but don't let it burn. Add milk and stir while it thickens. Add 1 cup of broth, seasoning, chicken, and veggies.
Roll out 1 pie crust and place in 9" pie pan. Put chicken mixture in pan. Roll out 2nd pie crust and place on top. If you were to bake this, you would brush the crust with the egg/water mixture, place in a 375 degree oven and bake for 30-35 minutes. Otherwise, freeze it. When you bake it, go straight from the freezer to the oven and bake for probably 35-40 minutes (this is the part I don't know, since I've only frozen it once and gave it to a friend after she had her baby).
I agree with freezing meals before baby gets here to have easy food on hand for when you just don't want to or can't cook. With DS I filled the freezer with spaghetti, chili, chicken soup, and stuff like that. I may have to try the pot pie.
