*Note- May substitute for preferred veggies or herbs (This salad does not have meat)
-1 small red onion
-1 head of lettuce (I used spinach and lettuce from my garden and eyeballed it)
-2 carrots (peeled and thinly sliced)
-5-7 radishes (sliced thinly)
-12 cheery tomatoes (I used yellow)
-1/4 cup shredded cheese (I used sharp cheddar)
-zest of 1 lemon
-juice of 2 lemons
-1 sprig of rosemary minced
-approx. 1/3 cup of olive oil
I chopped all the veggies accordingly and put them in a bowl. In a separate bowl I combined the minced Rosemary, lemon zest, and lemon juice. The Rosemary etc. sat while I chopped my veggies to absorb flavors. Lastly, I whisked in the olive oil to produce my vinaigrette. The olive oil measurement is approximate. The amount of oil varies on the amount of dressing you wish to create.
