This is what mama's craving today! You can either use Chicken or Tuna.
2 cans (drained) Tuna
2 celery stalks
1/2 white onion (chopped finely)
1/2 cup mayo
zest of 1 lemon
juice of 1 lemon
1/2 tsp dill
1/2 tsp parsley
salt to taste
pepper to taste
1 cup spinach (chopped finely)
5-6 Roma tomatoes
Mix all ingredients well. Cut and slice the tomatoes in half. Fill each one as desired. Larger tomatoes may be used. I used Romas so that they were easier to pick up and eat.
