My friend makes this delicious chicken salad. I tinkered with her recipe and made a WW friendly version of it:

Ingredients:
2 (2oz) cans Swanson Premium Chicken Breast Chunks
6 TBSP Hellman's Light Mayo (or whatever light/fat free mayo you like)
1 cup red seedless grapes, washed and halved
1/3 cup of dried cranberries
1/4 cup chopped walnuts
Salt, pepper, onion powder


1. Drain the chicken. Place into a colander or strainer and rinse really well with cold water (helps get the "canned" flavor out of the chicken).
2. Put chicken into a bowl and shred with a fork. Season well with salt, pepper, and a little bit of onion powder.
3. Add the mayo and mix.
4. Fold in the grapes, cranberries, and walnuts.
5. Portion out into 4 containers.


Each container is worth 5 WW Points on the points plus program. You can eat a whole container for lunch with a salad (it's nice and filling). Or you can top whole wheat or whole grain crackers with a bit of it for a snack
