1 cup buckwheat flour (or oat flour, rice flour- any gluten free flour)
2 tablespoons tapioca starch (okay to omit)
3 tablespoons ground flax seeds
1.5 cups unsweetened almond milk
1 mashed banana
vanilla extract, optional
dash of high quality sea salt
1/4 cup baking mix stevia (pyure brand is good) or 5-6 drops liquid stevia
1 tsp cinnamon
(optional- add blueberries, chopped nuts, etc)
mix all dry ingredients except flax seeds together.
add almond milk to flax seeds and set aside 3-5 minutes until it thickens
add mashed banana to flax seed mixture, then add dry to wet and mix until just combined
add water to consistency and cook on medium with coconut oil
top with fruit, a little maple syrup, or make fruit syrup by blending berries in a blender, adding water and stevia, and then cooking down to a syrup over the stove, wait til it cools and thickens, and use like syrup.
