Nourishing Kitchari (ayurvedic lentils and rice)

This is full of good spices and is balancing and nourishing. can be made vegan or veg- use coconut oil or ghee based on preference.

1 cup basmati rice, rinsed well
1 cup yellow or red dal, rinsed well
1 inch piece of ginger, chopped finely (i put mine in the bullet)
1tsp mustard seeds
1tsp fennel
1tsp ground ginger
1tsp coriander
2 tsp turmeric
a pinch of cardamom
1 tsp himalayan sea salt (or other high quality salt)
frozen peas

heat coconut oil in pan, add mustard seeds and heat until they begin to pop.
add all other spices and a little more coconut oil so they all combine together and get fragrant
add rice and dal, and 4-5 cups of water (depending on if you want it more like rice or more like soup) and simmer for 20ish minutes until rice and lentils are soft.

turn down heat, add frozen peas, stir.

garnish with cilantro!

there are many spice variations for this, so experiment- but the key medicinal ingredients are the turmeric and ginger!

Nice. I am Indian. We use ginger and turmeric in almost all our dishes

so good!!! and medicinal!! I could LIVE on indian food every day of my life-- i would LOVE to! I want to learn how to cook everything ! so far I'm good at kitchari, dal and vegetable korma.
