This recipe is so good!! I'm an expert vegan baker after perfecting recipes for the last 8 years. I suppose you could sub coconut flour and use an egg instead of (or in addition to) flax to make these paleo-ish.
makes 9-12 muffins or 1 loaf of banana bread
heat oven to 375'
1 cup sorghum flour
1 cup oat flour (or 1/2 cup flour, 1/2 cup oats for more fiber)
1/4 cup tapioca starch or potato starch
1/4 cup stevia baking mix
1 tsp himalayan/celtic sea salt
1 tsp baking soda
mix all dry ingredients
mash 2-3 super ripe bananas (brown spots)
1/3-1/2 cup almond milk
2-3 tablespoons ground flax seeds
3 teaspoons cinnamon
1/3-1/2 cup chopped walnuts
mix all wet ingredients, mashing bananas first, and stir until just combined
put in pan or muffin tin
bake 12-15 minutes for muffins, 25ish minutes for bread- but check until it's just done in the center and let cool for at least 10 minutes!
