Chicken breasts (how ever many you need to feed your family) seasoned with cumin, chili powder, salt, and pepper. Place in a crock pot and cover with salsa (I use two jars for my whole family, but I have a big crock pot so I think that plays a role) Add one jar full of water to the pot. You can add additional jalapenos or chili peppers if you want, or tomatillos, but I am so simple and just put in salsa. Cook as you would other chicken dishes according to your crock pot.

When it is done, shred the chicken and use a slotted spoon to get the salsa veggies. Serve in leaves of romaine lettuce for lettuce wraps, top with plain greek yogurt (or sour cream), guacamole or mashed avocado, and cheese.

I have a very busy week and will be gone for dinner a lot more than usual, so this is on the menu! Something DH can easily dish out to the kids. I just have to turn it on in the morning! Also helps since I have NOT felt like cooking at all- cooking makes me feel so ill and then I can't eat the delicious meal I prepared!
