This is more of an appetizer, but I eat it for a meal.



Ingredients

zucchini
cream cheese
maple bacon
butter

Directions

Cut off the ends of the zucchini. Slice your zucchini long ways. We use a mandolin. Grill it over medium heat with a scant amount of butter. Just enough to lube your grill. Grill till tender, can be lightly golden in places. Remove from heat, pat down if they gave up a lot of liquid, and let cool. Cook your bacon. When it is done, cut into quarters.

Onto each slice of the zucchini, put a heaping tsp of cream cheese and a piece of the bacon. Roll up. Done!

I've talked to someone that held the bacon and used flavored cream cheese. Garden Vegetable, etc.



Mine don't make it to the table most of the time. I roll and eat standing there in the kitchen. lol You can refrigerate large batches for later.

I wish I would have seen this earlier, we still have zucchini, but it's limited now!!
