I grew up on this, so my brother & I get cravings for it all the time! This really is a great 1/2 hr meal that uses stuff you probably already have in your pantry.
1 Cup uncooked rice (or follow directions for 3-4 servings of rice)
1 Can tuna (drained)
1 Can french cut green beans or peas (drained)
1 Can cream of celery, mushroom, or chicken depending on your preference
2 Large scopes of mayo
Salt & pepper to taste
Cook the rice as directed, transfer to a microwave or oven proof dish, mix in all other ingredients. You can also add spices such as paprika or old bay, whatever you like. Heat in the microwave for 5 minutes if you're in a hurry or cook in the oven at 425 for 15-20 minutes. If you are cooking in the oven you can add bread crumbs, crispy french onions, or crushed potato chips as a topper. Definitely serve with potato chips to scope all the yumminess up!
