She was due at the end of January with her first, a little boy, and she did have him without complications about 3 weeks ago.. But a week after she had him she had a stroke she's been in the ICU since and is supposed to be coming home soon, but I just feel so bad for them.. I'm glad baby is okay, but I know most strokes cause long term damage and I know she was going to try breastfeeding but she wasn't able to maintain in the ICU. And her husband has been taking care of the baby and going to spend time with her.. I just can't imagine.
I want to do something nice for them but I'm not sure if or what I can do. I thought about making them some casseroles and desserts, snacks and stuff.. But I don't know if that's really the best thing to do?

I think that would be a great thing for you to do! I'm sure it would help out the husband who is basically doing everything right now.
A couple of my friends made us some crock pot meals that we froze, so then we can take them out of the freezer and toss them in the crock pot. Just make sure you include detailed instructions on anything you give them that has to be cooked.

Also, I don't know how serious her stroke was, but they don't always result in permanent damage. My dad had a stroke about 6 years ago and he's perfectly fine. I will pray for your neighbor that she has a positive outcome!

It's so nice of you to do something to help out the family!
