Pillsbury makes a pink lemonade cookie mix and it is the bomb! Seriously they are the best none homemade cookies I've ever had. They make icing to go with them, but IMO they taste better without. Pillsbury Pink Lemonade Premium Cookie Mix, 17.5 oz: ARCHIVE SHELF/CAT : Walmart.com

Those look so yummy!

Have you tried the Cookie Brownie Bars? It is a little piece of heaven (or a big piece) (or a whole pan).

Mmmmmmmm...love me some brownie batter.

When I was pregnant with Claire I would make batches of Oatmeal Scotchie Cookies (basically like oatmeal cookies with pnut butter) without the eggs and I'd just eat coffee cups full all day. Not exactly the most healthy choice, but oh my it was delicious

 batter mmmmm *insert homer simpon voice*
i freeze batter when I bake because I bake vegan and no eggs issues. I tell myself I will cook the batter later. And of course I don't because even frozen cookie, brownie, cupcake batter is amazing

I love baking, and since I'm massively stressed out today I think I will bake a bunch of cookies. Baking is like therapy.

I made these tonight! YUM!
(I made them vegan tho and did 1/2 ww flour and 1/2c less sugar)

I got this a few years ago from an online friend!

pumpkin muffins
This is the double batch:

3 C sugar (I normally do 2 1/4c or so but if you want them desert like, use all 3c)
1 C oil (I often use applesauce or chunky applesauce)
4 eggs (I use vegan egg replacer)
2 tsp vanilla

Mix together until combined

3 1/2 C flour (I did half with whole grain pastry flour)
1 1/2 tsp salt
2 tsp cinnamon
1 tsp nutmeg
2 tsp baking soda

sift dry ingredients, then add wet to dry

2/3 cup milk (soy works great, skim works great)
1 3/4 cups pumpkin (canned - just a regular size can)

add half the milk, mix, half the pumpkin, mix again,
the rest of the milk, mix, the rest of the pumpkin, mix

optional:
1 cup chopped nuts
1 cup chocolate chips (we used vegan tropical source last time)

(just fold these in)

Bake at 350 for 20 minutes or until a cake tester comes out clean
