12 medium potatoes
salt and pepper
3 slices bacon (we use 5 or 6)
chopped green onion (optional)
shredded cheddar cheese
Preheat oven to 350. Scrub potatoes and pierce 3 or 4 times with a fork. Place in oven and bake for 50-60 minutes until potatoes are tender. While the potatoes are baking, fry the bacon until crisp and break into pieces. Remove potatoes from oven. When they are cool enough to handle, quarter (the long way) and scoop out pulp, leaving 1/4" of the pulp on the skin. Reserve pulp for another use. Place on a cookie sheet skin side down (we covered ours with aluminum foil and sprayed with pam). Brush the pulp on each skin with oil and sprinkle with salt and pepper. Bake in 450 degree oven for 15-20 minutes or the edges are starting to crisp. Remove from oven and top with bacon, green onion and cheese. Return to oven and heat until cheese melts, 5 minutes. Remove from oven and serve with
sour cream. Serves 12.
