What's for dinner tonight? and the rest of the week?

Tonight is Taco Chicken Bowls (AKA lazy night). I throw a chicken breast, corn, salsa, black beans, and seasoning in the crock pot for a few hours. Serve it over rice and voila! The easiest meal ever.

The menu for the rest of the week is
Split pea and ham soup with beer bread
Chicken and dumplings
Fajitas
Italian Wonderpot
and Pasta with mushrooms and spinach


Easy, easy week! I went over budget last week so I'm trying to even it out for this week!
What about you gals? Anything exciting planned for dinner?

I wish I was organized enough to do weekly meal planning, but I have no idea what’s for dinner tonight…or even lunch this afternoon.

Sunday was an alfredo pasta with chicken.
We had baked chicken and salad last night
Tonight is chicken tacos

(see a trend? I don't like red meat or fish!!)

The rest of the week will be leftovers.

I have to have meals planned out every week :/ Otherwise I'd wait until 5 to start thinking about it, realize I didn't have the right groceries and then decide on fast food I've been there a few too many times!!

Yeah, we are having a box dinner tonight. I cooked lots Nd I need a break today. I have a vague idea of the rest of the week, but nothing really planned out.

I rarely venture outside the world of chicken! There are just so many options with it I feel comfortable. Plus, it's healthy and relatively inexpensive! Fish can get really pricey if you want good quality so that's rare here.

We are either having spaghetti or spicy chicken and rice tonight.

The rest of the week will be cashew chicken, meatloaf and the one we don't have tonight.
Dh cooks Friday through Sunday so I only do 4 meals a week.

I am a meal planner too. Tonight we are having shepherd's pie with steamed green beans and pumpkin pie for dessert (only one son and I like it, so lots of pie for me). Tomorrow: Vietnamese pork over rice. Fri: Roasted chicken thighs, homemade biscuits, and spinach.

I had two burger patty's with cheese tonight . I'm not sure about the rest of the week I usually do one night at a time....lol tomorrow is our night to eat out Iwill have a steak and salad and Thursday I will prob have some veggies and chicken.

In other words being a diabetic is no fun!

We had mcdonalds. :-/. Today is DS' bday so we thought we'd take him for a happy meal and ice cream. Too bad the kid didn't eat more than a couple bites of his meal and it was the apple!! And we didn't get the ice cream until later, still did let him have it tho since it was his bday.

Tomorrow will probably be something leftover and then I'm making the chicken tacos in the crockpot someone else posted about!

I 'try' to plan weekly meals. Mostly I have a general idea in my head and try to at least have an idea in the morning! Today was a chicken alfredo pasta type dish with fresh bread. Tomorrow we are eating with our bro/sis-in-law after going over the paperwork for putting in a house offer. () Then I don't know, probably chicken wings thursday cus I have some in the freezer and then? maybe perogies friday.

DH and I recently started to plan meals too. Having one shopping trip at the beginning of the week cut our food budget right down!

I made a roasted chicken on Sunday and then made a soup out of it the next day. But I'm finding it really hard to stand up long enough to cook meals like that and do all the dishes, so we had frozen Pizza last night and will probably have some quickie spaghetti with ground turkey for the next two nights. On Friday I'll probably be too tired again and we'll end up eating tuna melts lol.

I stated 'losely' planning meals when we do our grocery shopping. Sometimes I stick to that meal for the particular day, or I will switch up meals depending on what my husband and I are craving!

Tonight: Chicken Parmesan and side of parmesan noodles
The rest of the week:
Japanese Stir Fry
Chicken Alfredo
Broccoli Cheese Soup
Mexican night (tacos or fajitas)

I'd love to meal plan, tried it many times in fact. But I'm so much of a 'what am I in the mood for today' type of person it never works. So I just keep on hand things to make the things we typically like and then once in awhile go shop for new dish ingredients.

Tonight will be something chicken, making chicken for lettuce wraps for lunch today so will just cook up extra chicken (maybe tacos or burritos). Then the rest of the week - who knows. At some point I'll make Swedish meatballs though.

We used to waste so much money when I used to grocery shop every two weeks.
Now I shop once a week and I stick to the menu most days.
