1 pkg chicken breasts (whatever size you need for your family, we do 3 cut up - 1 for me, 1 for sam, 1/2 for the kids)
2 cans diced green chilis
1 can black beans, drained
1 medium onion diced up
taco seasoning to taste (we use Rachael Ray's homemade taco seasoning recipe)
While you cut up the chicken, dump the onion and pepper in to the skillet and let it cook til the onion is transparent
add chicken and mix all together, add taco seasoning and let simmer for 2-3 minutes, add black beans and cook another 1-2 minutes, remove from stove and dump in taco salad shell (or regular taco)
super easy and my kids love it, and its reasonably healthy, especially for pregnant mommas - the black beans have magnesium in them, which will help reduce pre-e and the chicken has a fair amount of protein and if you top with dark leafy greens youre adding in iron!
